Deficiencies of Critical Micronutrients

The three most common forms of micronutrient defi ciency are iron, iodine and vitamin A. Dietary diversity is the best way to prevent micronutrient defi ciency. No staple food contains all the essential micronutrients. In iodine-defi cient regions, dietary diversity will not address iodine defi ciency as all foods are likely to be low in iodine.  Seawater is a reliable source of iodine so seafood is a good source of dietary iodine. Animal-source foods are the richest and most bioavailable source of most micronutrients. Green leafy vegetables are the most widely available source of vitamin A in the form of β-carotene.  Phytate and phenolic compounds interfere with mineral absorption and goitrogens block iodine utilization. Most vitamins are unstable and sensitive to light, heat, oxygen, moisture and pH. Cooking (i.e., heat), however, can help release β-carotene from plant tissue and destroy some goitrogens. Iodized salt improves iodine status of a population and reduces the risk of goiter. In some European countries where salt iodization is not actively promoted, surveys are revealing evidence of mild/
moderate iodine defi ciency. Mild iodine defi ciency in pregnant women has been associated with cognitive impairment in their children.
