At the beginning of 2019, the EAT–Lancet Commission published Food in the Anthropocene, a consideration of healthy diets from sustainable food systems.1 The authors observed that “A healthy diet should optimize health, defined broadly as being a state of complete physical, mental and social well-being and not merely the absence of disease,” 2 emphasizing that the scientific targets for the healthy diets advocated in the report were “based on
the extensive literature on foods, dietary patterns and health outcomes.”
